Four Types of Chicken Marinade Recipes For Make-Ahead Lunches

Bello! After dragging my butt through the week, I finally managed to put this post together and I am so happy to do it. I am thrilled to share with you, four super duper easy marinades that you can use for making your lunches ahead of time. I had been thinking of doing this for a long time to get more organized in life but I somehow managed to find time to cook everyday. But, things have changed now and my weekdays are just a blur. Battling between work and everyday cooking, I decided that there is no way I will succumb to ordering out expensive salads or eating junk food.

These marinades are easy and economical. Just chop up four chicken breasts and divide it into four bowls. Throw in the marinades and coat the chicken pieces nice and proper. Put the chicken portions in zip lock bags and dump them in your freezer.

Whenever you get hungry, just thaw any marinade of your choice and cook for 10- 12 minutes in a pan. Food is ready! If you feel adventurous, you can toss in some boiled pasta or steamed rice to make a big meal. Trust me, knowing that there is delicious chicken in your freezer that you can have any time you want is a huge stress buster. It also helps you in saving money and following a healthy diet plan. I believe that anything cooked at home is healthier than outside food.

Pro tip: The size of chicken pieces will determine the amount of time it takes for them to thaw. Go for thin slices. This recipe is all about efficiency without compromising on deliciousness and health.

1. Peanut Sesame Marinade 

  • 1 tsp Sesame Seeds
  • 2 tbsp Soya Sauce
  • 2 tbsp Thai Chili Sauce
  • 1 tbsp Peanut Butter
  • 2 tsp honey (optional)
  • 3-4 cloves of Garlic
  • 2.5 inch piece of Ginger
  • Juice of 1 Lemon
  • Salt (to taste)

2. Pesto Marinade

  • Big Bunch of Basil
  • Big Bunch of Parsley
  • 2 tbsp Olive Oil
  • 3-4 Cloves of Garlic
  • Juice of 1 Lemon
  • 7-8 Almonds
  • 7-8 Cashew Nuts
  • Salt to taste

3. Tandoori Lemon Coriander Marinade

  • Big Bunch of Coriander
  • 3-4 Cloves of Garlic
  • 2 tbsp Olive Oil (or Cooking Oil)
  • 1 Tbsp Tandoori Chicken Masala
  • 1 Tsp Cumin Powder
  • Juice of 1 lemon
  • Salt to taste

4. Chilli Garlic Marinade

  • 4-5 Cloves of Garlic
  • 1 Tbsp Chilli Flakes
  • 1 Tbsp Dried Oregano (Use fresh if you have it)
  • Juice of 1 Lemon
  • 2 Tbsp Olive Oil
  • Salt to taste
