Baked Honey Chili Potatoes

A little sweet and a little hot, these baked honey chili potatoes are an absolute treat. The sticky and charred texture is too good to resist. I served these at a house party and even with pork sausages around, these babies managed to make their way to everyone’s plates. If you are running short on time or energy and yet feel like whipping out something delicious from your kitchen, this one’s a keeper.

Here’s what we need:

  • 4-5 medium sized boiled potatoes (skin on)
  • 2 tbsp sweet chili Sauce or sriracha sauce
  • 1 tbsp lemon juice
  • 4 tbsp olive oil
  • 3 tbsp soy sauce
  • 1 tbsp honey
  • 5-6 cloves of garlic
  • 3 inch piece of ginger
  • Salt and pepper to taste

Pre-heat the oven to 220 degree Celsius. Throw in the chili sauce in a mixing bowl.

Add a dash of fresh lemon juice.

Pour in the olive oil. Do not use extra virgin olive oil. It is not suitable for cooking at high temperatures.

Next goes in the soy sauce.

And sweet sweet honey!

Taste the marinade before adding salt as soy sauce will make it quite salty already.

And some peppah!

Throw in the whole garlic. They will get nice and crunchy in the end and you will be picking them out and probably fighting over them.

Add a good punch of grated ginger. It’s the unsung hero of this dish.

Grab a bunch of boiled potatoes.

Chop them into wedges and DO NOT remove the skin. The skin is the best part.

Dump the potatoes in a baking dish and pour in the marinade. Use your hands to rub in the marinade and not a spatula. The spatula will either crush the potatoes or take the skin off.

Stick the baking dish in the oven for 45- 50 minutes or until the potatoes start sizzling and getting charred.

This is going to be one of the best starters you ever served. It’s hot, sour, sweet and spicy all packed together. It’s darn good! Make asap.
