Eggless Banana Cake With Strawberry and Chocolate Swirls

Here’s a cake that’s just perfect for a Christmas treat and I am glad to bring it to you just in time.

Super duper easy to make, the only thing you will probably worry about is the number of batches you might have to bake once you have served this to your friends and family. It’s simply not enough. It just isn’t. I have baked this 3 times in 1 week already and I am baking it again, right after I finish writing this post.

Other side effects of baking this cake- you’ll be blamed for messing up people’s diet plans and might even be asked to leave the room along with your box of cake (saying this from first hand experience).

Soft banana cake with just a faint scent of cinnamon, dollops of dark chocolate ganache and pockets of strawberry sauce/jam, this is an outrageously delicious cake.  So, let’s get going!

Here’s what we need:

Equipment

  • 9×13 inch Baking Pan
  • Electronic Beater or Large Hand Whisk

For Banana Cake

  • 335 gm all Purpose Flour (maida)
  • 30 gm Corn Flour
  • 2 tsp Baking soda
  • 1/2 tsp Baking Powder
  • 1 tsp Salt
  • 1 tsp Cinnamon Powder
  • 400 gm Castor Sugar
  • 2/3rd Cup Canola Oil
  • 1 Cup Mashed Ripe Bananas
  • 1 Cup Milk
  • 2 tsp Vinegar

For Swirls

  • 1 Cup Strawberry Sauce or Strawberry Jam
  • 1 Cup Chocolate Ganache or Nutella

Method:

Pre-heat the oven to 180 C or 350 F. Prepare the baking pan by lining it with parchment paper or brush butter generously and dust with flour.

Sift the flour into a giant mixing bowl. This is a big cake. Yet, it doesn’t even last a day.  It’s almost too yummy to be true.

Next, the corn flour! Using cornflour makes the cake crumb more tender. Substituting a portion of all purpose flour with corn flour makes cake flour. That is exactly what we are doing here.

Throw in the salt, baking powder and baking soda. Since this recipe uses oil, do not forget to add salt. Usually salted butter makes up for the salt requirement of a recipe.

Next comes the cinnamon. I cannot imagine a banana dessert without a dash of cinnamon. They are meant to be.

Throw in the sugar and whisk all the dry ingredients thoroughly.

Pour the vinegar into the milk and let it stand while you prep the dry ingredients.

Mix in the milk with the dry ingredients.

Add the mashed bananas. BaNNaNNahh

Put pepperoni on the cake batter! JK spoon the strawberry sauce over the cake batter.

Then spoon the chocolate sauce wherever you wish to.

Use a skewer or a tooth pick and gently run it across the batter in parallel lines.

You could actually run it any way you like and make your own pattern. It’s so much fun.

Stick it in the oven for 55- 60 mins until it’s done.  Wait with all your might for it to cool down cz the strawberry sauce and chocolate ganache are gonna be too hot and runny to cut clean pieces. I would suggest 2 hours waiting time but who am I to suggest anything when it comes to waiting for eating a cake? No, really! I am a rebel like that.

I was running outta daylight so I went ahead and cut the slices a bit before it cooled completely. And I ate a hell lot of it of you believe me.  This cake is spectacularly delicious and soft. You MUST bake this cake.

    Hi, thank u so much for the amazing recipes. Today i baked the eggless banana cake and it was yummy yummy. To bake eggless cake has always been a challenge n this cake is superb. i baked it just simple minus the strawberry n ganache swirls, used walnuts instead ( i love walnuts).
